Our bakers-advisers support and advice our customers to help them improve the quality of their products: optimization of bread aromas, sourdough control, creation of new recipes… Coming from the best backgrounds, our team includes a Meilleur Ouvrier de France (Best Craftsman of France) and two Companion du Devoir. At the same time, our technical specialists make diagnosis and provide recommendations to help professionals optimizing their production processes.
With the evolution of customers’ tastes and expectations and the progress of production techniques and cooking methods, the industry of bakery, viennoiserie and patisserie is more and more focused on innovation and is looking for novelties. In our labs and in partnership with our customers, we develop tailor-made flours in order to meet their specific needs in terms of blending, refining, grain size, ash content, cooking process, texture, aromas, colours, recipes...
In 2012, we have inaugurated Atelier M’Alice, a certified training center that enable us to transmit and preserve a know-how and train professionals of the bakery industry from today and tomorrow. We offer a wide range of training courses, either standardized or personalised, intended to different profiles and tackling as much fundamentals (cereals, flours, organic products, fermentation, kneading…) as other business aspects: organization, management, marketing...
Because of flour’s weight and cost of transport, very few French mills deliver beyond a 200 kilometers radius. This is not our case and our logistic organization enables us to satisfy customers everywhere in France, and also abroad. This is because we truly believe that the French gastronomy, including good bread and home made croissants, does not have borders.
As player in this industry, this is our role to meet a real demand and to share organic flours ‘made in France’ with the widest number of gourmet people.
